kms/update: Change 'seal' to 'lock'
Sealing is a one way operation, but in the next commit, the "seal" will be broken, so to avoid missusing the "seal" terminology, rename related methods and variables to use the term "lock" instead. E.g. meta_update_is_sealed() is now meta_update_is_locked(). Part-of: <https://gitlab.gnome.org/GNOME/mutter/-/merge_requests/1488>
