monitor-manager: Remove 'mirror' capability
With per-CRTC views, there is nothing stopping NVIDA EGLStream based rendering to not support monitor mirroring, so lets remove that restriction. https://gitlab.gnome.org/GNOME/mutter/-/merge_requests/1098
