clutter/stage: Fix trace being non-scoped
While integrating Tracy, gcc caught its variable being unused here. Bugfixes start flowing even before any actual profiling! Part-of: <https://gitlab.gnome.org/GNOME/mutter/-/merge_requests/3313>
