It's more common to use the dedicated .rst suffix for reStructuredText
files, so now that the files were ported,
use that.
(Renaming the files separately from changing it is less likely
to confuse git, thus the separate commit)

It's as human-readable as asciidoc and produces the same results,
but the tooling is more widely supported. Also both GLib and GTK
switched to it for their man pages, so rst2man is already a
dependency of the platform.

The man page hasn't been updated in years, so the list of options ended
up being quite outdated. Most notably it's missing all wayland-related
options.
Remove obsolete options and add all the missing ones so that the list
is up to date again.

We already use asciidoc for the gnome-extensions man page, while
the main man page is generated from docbook XML. The former is a
much friendlier source format, so use it for both man pages.
Hopefully the plain text format encourages updates, to prevent the
page from getting as badly out of sync again as it is currently.

Meson is on track to replace autotools as the build system of choice,
so support it in addition to autotools. If all goes well, we'll
eventually be able to drop the latter ...

We can autodetect what to do based on the user's session, so drop
the separate desktop files.
This, along with some future changes, will enable us to be bus
activatable.
